- Eggplant — 1 Kg
- Minced beef — 500 Grams
- Bell pepper — 3 Pieces
- Onion — 2 Pieces
- Tomato paste — 1 tbsp. spoon
- Salt – to taste
- Greens — to taste

How to prepare “Stuffed eggplant in Armenian”
Peel onions, eggplant and peppers my.
Peel the eggplants as shown in the photo.
Fry the peppers and eggplant whole until soft.
Simultaneously, in another pan simmer the onion and beef. Simmer 15 minutes on medium heat, at the end add salt and pepper to taste.
The second onion finely chop and fry in butter until transparent.
Then add to the onion tomato paste and herbs. Stir, simmer for 2-3 minutes and remove from heat.

Put stuffed eggplants in a baking dish, put there roasted the peppers, pour all the tomato paste with the onions and herbs and in the oven. Bake 20 minutes at 180 degrees.
